The works deals with the mechanisms of interaction between petroleum residues with elemental sulfur at different conditions aimed at investigation of the effect of elemental sulfur introduction on variation of the quality and the properties of oil dispersed system components. The character of variation of physico-chemical properties of petroleum residues modified by elemental sulfur has shown that interaction with sulfur influences variation of multiphase system parameters and its nature. It was found that the sulfur, added into petroleum residues, is introduced into dispersed phase nucleus - asphaltene structures with accompanying decrease of common asphaltene signal intensity, disordering of asphaltene crystalls lattice, decrease of molecular mass which leads to variation of multiphase system properties on the whole.
